The Katcha is our on Grappa which we make from the fermented skins of the white grapes after the press.
We distill it twice to 82% of Alcohol and then double it with flood water we collect in the winter.
We add Habag – Mentha longifolia – mint we brought and planted in the vineyard from the high mountains of Sinai (Santa Chaterina).
Wonderful sip.
